Wynford One Pot Roast
Feeds four, twice (if they have an appetite and figure like me).
This makes a superb meal and the preparation is minimal. Great
for dinner parties as it is impressive and easy to make, a great
combination.
Pre-heat the oven to 190deg C
Take a good sized Wynford Aberdeen Angus roast (say 1.5 to 2kg),
four onions, a handful of carrots, six good sized tomatoes, a
small jar of sun dried tomato paste, ten potatoes, some olive
oil, a sprinkling of herbs and a bottle of good red wine.
Put some olive oil in a cast iron roasting pot, brown the roast
all over. Add all the other ingredients and ½ of the bottle
of wine.
Put the covered roasting pot in the oven for 1hr 45 mins, less
if you want it pink more if you want it "fall to bits tender".
Take the roast and veg out the roasting pot and put it to one
side to rest for 10 minutes. Add some wholemeal flour to the juices
and stir over a gentle heat to make gravy.
Slice roast and serve with the veg and gravy.
Drink the remaining 1/2 bottle of wine!
