Easy Wonderful Meatballs
Tomato sauce
2 tablespoons of olive oil
One medium onion
3 or 4 large garlic cloves, crushed
8 large tomatoes
Mixed herbs
Salt and pepper
Heat the oil and fry the onion until soft, add the garlic and
stir for a minute or two more. Add tomatoes and as they cook break
them up with a wooden spoon and simmer for a few minutes. Add
some flour and stir until the sauce thickens. Adjust seasoning
to taste and leave at a slow simmer.
Meatballs
500g Wynford minced beef
2 cloves of garlic, very finely chopped
20g Parmesan cheese, grated
100g Blue cheese cut in 12mm cubes
pinch of cayenne pepper
some herbs such as chopped oregano, parsley and basil
Combine all the ingredients for the meatballs together, except
the cheese cubes, and mix thoroughly. Shape the mixture into meatballs
and push a cheese cube into the middle, roll in your hands to
seal the cheese in. Fry gently, in batches, until browned all
over then place them in your tomato sauce.
Simmer for half an hour in the sauce and serve over spaghetti
or any favourite pasta.
